Regulatory and Consumer pressure on the food industry to continually reduce
levels of Sodium in processed food has resulted in new research into this issue.
Salt is one of the most difficult ingredients to replicate due to its numerous
essential functions in processing, including beneficiary characteristics like binding
ingredients and extending shelf life.
Many in the industry have warned that taking out significant amounts of salt could
alter the substance of the product.
